Spaghetti Pasta with Olives and Fresh Herbs Sauce

Ingredients:

  • 1 pound spaghetti pasta
  • 1/2 cup pitted kalamata olives, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh oregano leaves, chopped
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions:

  1. Cook the spaghetti pasta according to the package directions until al dente.
  2. While the pasta is cooking, prepare the sauce. In a large bowl, combine the chopped olives, parsley, basil, oregano, minced garlic, and olive oil. Mix well to combine.
  3. When the pasta is cooked, drain it and reserve 1/2 cup of the pasta cooking water.
  4. Add the cooked spaghetti to the bowl with the olive and herb mixture. Toss well to coat the pasta evenly with the sauce.
  5. If the sauce seems too dry, add a little bit of the reserved pasta cooking water to moisten it.
  6. Season with salt and freshly ground black pepper to taste.
  7. Serve the spaghetti hot, with grated Parmesan cheese on top if desired.
