Ingredients:
- 1 pound spaghetti pasta
- 1/2 cup pitted kalamata olives, chopped
- 1/4 cup fresh parsley leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh oregano leaves, chopped
- 4 garlic cloves, minced
- 1/4 cup olive oil
- Salt and freshly ground black pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions:
- Cook the spaghetti pasta according to the package directions until al dente.
- While the pasta is cooking, prepare the sauce. In a large bowl, combine the chopped olives, parsley, basil, oregano, minced garlic, and olive oil. Mix well to combine.
- When the pasta is cooked, drain it and reserve 1/2 cup of the pasta cooking water.
- Add the cooked spaghetti to the bowl with the olive and herb mixture. Toss well to coat the pasta evenly with the sauce.
- If the sauce seems too dry, add a little bit of the reserved pasta cooking water to moisten it.
- Season with salt and freshly ground black pepper to taste.
- Serve the spaghetti hot, with grated Parmesan cheese on top if desired.
